RABBIT with basil
1 rabbit, in pieces, fry in butter
2 onions chopped
6 shallots chopped
2 garlics chopped, fry briefly
1/2 l white wine
1/2 l poultry soup
1 bouquet garni: thyme, bay leave, celery, carrot, leach
[100 g smoked ham, diced]
salt.
Cook for 30 min. Remove bouquet garni. Reduce liquid.
2 Tbsp cream
flour/butter balls (30 g flour + 30 g butter)
boil till dissolved
1 hand basil chopped.
Boil for 2 min.
